Kitty Hawk Distillery - Brisbane

  • Founded in Brisbane by 2 couples who met through a mutual love of aviation, Kitty Hawk Distillery was named as a nod to the site of the first powered flight in 1903.

    As the Wright brothers took to the skies in 1903 they surely could not have envisaged where their tentative steps into the unknown would lead mankind.

    As aviators, our own, small tentative steps into an exciting and growing craft spirits industry have been exhilarating and challenging, but to see, taste and smell our own unique spirits run off our copper pot stills has been as great an experience as the thrill of flying.

Cape Byron Distillery - Byron Bay

  • At Cape Byron Distillery, we keep true to the time-honoured traditions and art of distillation whilst creating spirits that capture and showcase the unique terroir of the Northern Rivers (greater Byron Bay region).

    We have a passion for excellence, sustainability and giving back to our local community. We are here to create a new chapter in the book of Australian Distilleries.

    Co-created by one of Scotland’s most awarded Master Distillers, Jim McEwan and Cape Byron Distillery Co-founder and distiller Eddie Brook, this Australian adaptation of a classic Scottish whisky is truly remarkable and unique to the terroir of the Byron Bay region.

    Whisky Journey

    When our good friend, Mikey Hilburger, asked for help extracting a barrel of whisky from an infamous Tasmanian distillery, we saw an opportunity not only to help a mate make his dreams become reality but to create something truly special. After five and a half years locked away in Van Deiman’s land, the whisky in the 100L ex-port cask needed liberation, and this is where the Tales of the Broken Chain began. The whisky arrived as a ray of hope for us in the dark days of the pandemic, and on that day, we were inspired.

    This whisky tells the tale of two historical distilleries, of camaraderie and of a community’s strength through pandemics, floods, and upended vats of rum. This whisky is all that remains of the Tales of the Broken Chain, a project which holds a special place in our heart as both a celebration and a commemoration.

    It is a privilege to release this beautiful spirit, which is both our finest achievement to date and an embodiment of the hardship and adversity endured by all those who achieve success.

Highwayman Whisky - Byron Bay

  • Highwayman Single Malt Whisky - Made in Byron Bay

    Highwayman whisky is the hard work and lifelong commitment of Dan Woolley.

    Dan has been one of the modern faces of whisky over the last ten years, holding one of the most sought-after Whisky ambassador roles in Australia. Throughout this role he travelled countless hours, covered thousands of Highway miles with a bag full of whisky, educating whisky lovers – He was the Highwayman of whisky. This role gave him a backstage pass to globally renown distilleries throughout Scotland (especially Islay), Kentucky, Tasmania and Japan. These journeys developed a deeper, hands on understanding of production and a huge passion for whisky maturation.

    In 2016 Dan started to lay down his own spirit in his chosen casks, collecting the first ten batches from favorite distillery locations around Australia. He sent them on the Highway to Coastal Byron Bay, NSW, their new home (and his) where they matured while Dan started acquiring the equipment he needed to produce his own spirit. In a dream come true and an alignment with Lord Byron distillery, this new make spirit came to life and production started on Dan’s still in 2018.

    In mid-2020 he launched the brand Highwayman – his life’s work in a liquid library for all to share. The first bottlings not only sold out in minutes but have now found their way back onto the Highway to whisky lovers all over Australia and some of them sneaking off internationally.

    The new chapter of Highwayman whisky’s liquid library sees the unleashing of the first ever 100% Byron Bay single malt whisky. Local barley is milled, mashed, fermented, distilled and aged in a combination of different oak casks. This art is all created at the Lord Byron distillery. Hand made in micro batches and bottled at cask strength in its purest form.

  • Brisbane Distillery Company was founded by Master Distiller Jon Atherton in 2019 as Brisbane's first Gin Distillery. His mission was (and still is) to produce quality local spirits with Australian botanicals. Brisbane Distillery is our city’s first grain-to-glass artisan distillery, where we are crafting new and exciting gin, agricole rum & botanical vodka.

    We control every step of the process, from the farm where our botanicals are grown to the way we expertly ferment, distil, mature and blend our spirits. Our hand-crafted approach to spirit production passionately combines methods, expertise, skills and absolute commitment to quality.
