Dr Gimlette

  • Dr Gimlette is located on Brisbane’s high end fashion district, Edward street, in one of Brisbane’s oldest buildings.

With the inspiration of the best cocktails bars around the world, the team is thrilled to upholding table service and superior drinks.

It’s name is in honour to surgeon Rear-Admiral Sir Thomas Gimlette (1857–1943), who is said to have first added lime cordial to the daily gin tot of the men in the Royal Navy, to help combat the ravages of scurvy on long voyages. That combination of Gin and Lime Cordial was later adapted and served as the Gimlet Cocktail.

Our beautiful 9-meter-long marble bar allows all guests to see the wonderful heritage brickwork and staff creating the exquisite cocktails from our menu. Luxury finishings of Italian leather booths, hardwood floors and brass light fittings will provide all guest with an escape within the city. There will be 2 Martini Carts available to serve every type of martini with various garnishes, gins and methods to pick from.

The Gresham

  • Steeped in history, we have done our very best to maintain and preserve our historical surrounds.

The Gresham offers some of the highest calibre rum, whiskey and wine in the country. The extensive and progressive cocktail list are only able to be crafted by the best bartenders in the industry.

Table bookings not accepted - First come, first serve - Group bookings available (groups of 18 pax and up, minimum spends apply).

Opened in late 2013, The Gresham is certainly a unique space. We pay homage to our heritage and history not only through the various items displayed in our venue, but also through our old-schools service that remains, hospitable. The Gresham has a progressive view on drinks - we appreciate trends, however we are not one to follow the crowd.

We welcome people regardless of what they are wearing, it makes for a more interesting clientele and dynamic within The Gresham - we opened our doors with the opinion, we have an attitude policy, not a dress policy.

The Gresham isn’t a specific whiskey or rum or cocktail or wine bar – but it does have all of the best on offer.

We are on a constant quest, purveying the finest beverages, and bringing them to Brisbane
