Derwent Distillery
Had the absolute pleasure of heading down to Derwent Distillery for the launch of their First Release—Tawny and Botrytis Cask Single Malts. Guests arrived to the sound of Scottish bagpipes, with the Derwent River and mountains providing the perfect backdrop for an afternoon of whisky and history.
Derwent Distillery is more than just whisky. Originally founded in 1823, it was one of Tasmania’s earliest legal distilleries before closing in 1838. Today, Emma and Robbie Gilligan have revived the name with a commitment to sustainability. Everything from the water and power to the bottles and packaging is designed to be renewable, with 100% recycled glass, compostable closures, and a collectible recycled cotton dust bag.
Fanny’s Bay Distillery
Perched on Tasmania’s northern coast, Fanny’s Bay Distillery offers a whisky experience like no other. Founded by Mathew and Julie Cooper in 2014, this small-scale, artisanal distillery has carved out a unique place in the Tasmanian whisky landscape. I spent a fantastic afternoon at Adams Distillery, just south of Launceston at the Glen Ireh estate. This Tasmanian gem has an incredible story, rising from humble beginnings in 2016 to becoming an award-winning distillery despite a devastating fire in 2021.
