What Stood Out:
Matt and Sarah, the founders of Alchymia, transformed their lives after a trip to Tasmania in 2016, leaving behind corporate careers to pursue their dream of distilling. Their boutique distillery embraces sustainability by using reclaimed materials and even growing barley onsite for their whiskies. From gristing to bottling, every step of the process happens at their stunning coastal location.

While Alchymia is known for its handcrafted single malt whiskies, they also create gins, vodkas, liqueurs, and are preparing to venture into rum production. Their commitment to small-batch excellence and sustainable practices truly sets them apart.

Tasting Highlights:
I sampled their two current releases from The Exordium Series:

  • Series I Bourbon: A single cask whisky matured in an ex-Heaven Hill bourbon cask, offering rich flavours at 48.8% ABV.

  • Series II Madeira: A bold single cask whisky matured in an ex-Madeira cask, showcasing complex flavours at 47% ABV.

Both expressions were remarkable, revealing even more depth and character as the whiskies warmed up—a true reflection of Alchymia’s craftsmanship.
