An Afternoon at Adams Distillery

Nestled at the Glen Ireh estate just south of Launceston, Adams Distillery is definately worth a visit. Founded in 2016, this award-winning distillery has an inspiring story of resilience, rising from the ashes of a devastating fire in 2021. Their innovative spirit and unique “sloshing process” have firmly established Adams Distillery on the global whisky stage.

What Stood Out:
The highlight of my visit was their creative approach to cask ageing. While the whiskies are built on a solid ex-bourbon foundation, Adams Distillery enhances them with unique casks such as ex-pinot noir, sherry, port, maple syrup, and Tipo Jerez (Mexican sherry). These imaginative combinations result in complex and layered flavour profiles that are anything but ordinary.

Tasting Highlights:

  • Signature Series 42%: A beautifully layered whisky with notes of vanilla, honey, and caramel.

  • Signature Series 59%: A bold expression with rich pinot noir influences and festive Christmas spice.

  • Coffee Whisky Liqueur: A standout creation blending rich espresso, whisky, and dark fruits—a perfect dessert treat.

The depth of flavour in each expression reflects their dedication to craftsmanship. I can’t wait to return and try their second Whisky Flight.
