Derwent Distillery
Nestled on the banks of the Derwent River in Dromedary, Tasmania, Derwent Distillery is a revival of one of the region’s earliest legal distilleries. Originally founded in 1823 by Rowland Walpole Loane on the Hobart Rivulet, the distillery played a pioneering role in Tasmania’s whisky history. However, shifting colonial policies in the 1830s led to its closure in 1838. Today, Emma and Robbie Gilligan have breathed new life into the name, crafting single malt whisky, gin, and liqueurs with a deep commitment to sustainability and local foraging. This blend of historical legacy and modern craft makes Derwent Distillery a fascinating destination for whisky lovers.
What Stood Out:
I was lucky enough to be invited to the launch of Derwent Distillery’s First Release bottles (Tawny and Botrytis Casks), and I was not disappointed. Guests arrived to the sound of Scottish bagpipes, with the mountains and river providing a breathtaking backdrop. The evening featured a feast that seamlessly incorporated Derwent whisky into the menu, including whisky-infused chocolate balls and pâté. The honey and cheese platter, however, had me coming back for more.
After enjoying the feast, we were introduced to the true stars of the evening—the Tawny and Botrytis Cask releases. Both whiskies were exceptional, and I’ve had the chance to revisit them weeks apart. The Tawny offered a rich thick fruit filled flavour screaming of history, while the Botrytis stood out with its enticing lawyers of sweet honey and fruit, drawing me back for another sip again and again. Each tasting experience revealed new complexities, making both bottles worth exploring multiple times.
Stepping into Derwent Distillery feels like stepping into a storybook of Tasmania’s distilling past. The picturesque riverside setting, combined with Emma and Robbie Gilligan’s dedication to crafting exceptional spirits, creates an atmosphere of passion and authenticity. What truly stood out was their unwavering focus on sustainability—every aspect of their process, from water and power to bottling and labelling, is designed to be renewable.

Tasting Highlights:
During my visit, I had the pleasure of sampling the first releases (Distillery Tasting Notes):
• Botrytis Cask Matured Single Malt Whisky –
Nose: Sweet with aromatic undertones, with honeyed apricots, candied orange peel, and a hint of warm spices. Floral undertones and a whisper of earthy sweetness evoke the character of botrytis-affected wines.
Palate: Silky and luscious, showcasing layers of green melon and white peach, poached pears, and a dusting of vanilla. A subtle note of green tea emerges, balanced by a refreshing citrus zest.
Finish: Long and velvety, with lingering notes of sweet honey and complemented by a gentle oakiness.
• Tawny Cask Matured Single Malt Whisky
Nose: Bold and inviting, with a medley of ripe plums, dark cherries, and spiced fruitcake. Hints of toasted almond and cocoa add depth.
Palate: Full-bodied and indulgent, featuring flavors of blackberry compote, dark chocolate, and molasses. The mid-palate reveals a touch of cinnamon spice and orange marmalade, adding complexity.
Finish: Rich and warming, with echoes of stewed fruits, toasted oak, and a hint of dried fig.
